The Ultimate Carrot Cake

  • Makes 12 – 15 servings
  • Ingredients:
    • 2 cups Flour
    • 2 cups Sugar
    • 2 teaspoons Baking soda
    • 2 teaspoons Cinnamon
    • 1 teaspoon Salt
    • 4 eggs
    • 2 teaspoons vanilla
    • 1 cup Oil
    • 4 cups Shredded carrots
    • ½ cup Chopped pecans
    • ½ cup Raisins
    • ½ cups Crushed pineapple, drain
  • Instructions:
    • Preheat oven to 350 degrees. Grease and flour a 13 x 9 cake pan very well. Combine flour, sugar, baking soda, cinnamon, and salt in a bowl. Set aside.
    • Beat eggs, vanilla, and oil together. Add to the flour mixture and stir until blended. Stir in carrots, pecans, raising, and crushed pineapple. Pour into pan and bake for 45 minutes or until a toothpick comes out clean. When cool, dust with powdered sugar.
    • This is a very moist cake. Spread with traditional cream cheese frosting as a truly decadent alternative.
