This is a great recipe to use when home-grown tomatoes are in big supply!
This recipe makes 6 servings.
Ingredients:
3 large Tomatoes, ripe
2 T. Butter or margarine, melted
1 c. Italian seasoned breadcrumbs
1/2 c. Grated parmesan cheese
1 t. Dried parsley flakes
1/2 t. Garlic powder
Instructions:
Preheat oven to 350 degrees.
Core tomatoes and slice in half horizontally. Place cut-side up on a baking sheet. If the tomatoes are unsteady, take a very thin slice off the bottom to stabilize. Brush each tomato lightly with melted butter/margarine.
Combine any remaining butter with breadcrumbs, parmesan cheese, parsley flakes, and garlic powder. Pat crumb mixture evenly on top of each tomato.
Bake for 20-25 minutes or until crumbs are golden brown.
