Parmesan Tomatoes

  • This is a great recipe to use when home-grown tomatoes are in big supply!
  • This recipe makes 6 servings.
  • Ingredients:
    • 3 large Tomatoes, ripe
    • 2 T. Butter or margarine, melted
    • 1 c. Italian seasoned breadcrumbs
    • 1/2 c. Grated parmesan cheese
    • 1 t. Dried parsley flakes
    • 1/2 t. Garlic powder
  • Instructions:
    • Preheat oven to 350 degrees.
    • Core tomatoes and slice in half horizontally. Place cut-side up on a baking sheet. If the tomatoes are unsteady, take a very thin slice off the bottom to stabilize. Brush each tomato lightly with melted butter/margarine.
    • Combine any remaining butter with breadcrumbs, parmesan cheese, parsley flakes, and garlic powder. Pat crumb mixture evenly on top of each tomato.
    • Bake for 20-25 minutes or until crumbs are golden brown.
