Pam’s Famous Vegetable Soup

  • Makes 4 – 6 servings
  • Ingredients
    • 2 c. Water
    • 2 Beef or chicken bouillon cubes
    • 6 c. V-8 juice
    • 3 Bay leaves
    • 1 ½ t. Black pepper
    • 1 large onion, chopped
    • 4 c. chopped cabbage
    • 16 oz. Frozen mixed vegetables
    • 3 Potatoes, peeled & diced
    • 1 T. salt
  • Instructions
    • Combine water, bouillon, V-8 juice, bay leaves, pepper, onions, and cabbage in a large sauce pan. Bring to a boil. Add mixed vegetables. Reduce heat and simmer for 1 ½ hours
    • During last ½ hour, and potatoes and salt. Remove bay leaves and serve.
