Grilled Ranch Chicken Salad

  • Makes ten 1/2 cup servings
  • Ingredients
    • 2 cups Medium shell pasta
    • 1 lb. Chicken breasts
    • 1 Tablespoon Olive oil
    • Sprinkle of Garlic powder
    • 1/4 cup Red onion, thinly sliced
    • 1/3 cup Celery, diced
    • 1 1/2 cup Radishes, thinly sliced
    • 3/4 cup Light Ranch dressing
    • Salt and pepper, to taste
  • Instructions
    • Cook pasta according to package directions. Drain and rinse with cold water.
    • Saute chicken breasts in olive oil. Sprinkle with garlic powder and brown on both sides. Cover and simmer over medium heat until cooked through, approximately 8 minutes. Cool and dice.
    • Combine pasta shells, chicken, red onion, celery, and radishes in a bowl. Toss with ranch dressing. Season with salt and pepper. Chill.
