Fresh Orange Cake

  • Ingredients:
    • 1/2 c. Butter, softened
    • 2 c. Sugar
    • 7 eggs, separated
    • 3 c. Sifted flour
    • 1 T. Baking powder
    • 1/4 t. Salt
    • 1/2 c. Orange juice
    • 1/2 c. Water
    • 1 t. Vanilla
    • 3 c. Powdered Sugar
    • 3 Oranges, juiced
    • Water
  • Instructions:
    • Preheat oven to 350 degrees. Spray a Bundt pan with non-stick spray.
    • For the cake: Cream butter and sugar until fluffy. Add egg yolks and beat until blended.
    • Combine flour, baking powder, and salt. Add flour to butter mixture, alternately with the orange juice and water. Add vanilla.
    • Beat egg whites until stiff peaks form. Fold into cake batter. Pour batter into Bundt pan.
    • Bake for 45-50 minutes or until a toothpick inserted one inch from the edge comes out clean. Cool. Invert and drizzle with glaze.
    • For glaze: Combine powered sugar with the juice from 3 oranges. Mix until smooth. Add enough water to make a glaze consistency.
