- Ingredients:
- Crust:
- 1 c. Margarine
- 1/2 c. Powdered Sugar
- 2 1/3 c. Flour
- 2 Lemons, grated
- Filling:
- 4 eggs
- 2 c. Sugar
- 1/2 c. Flour
- 1 Lemon, grated
- 6 T. Lemon juice, fresh
- 1 t. Baking powder
- Powdered sugar
- Instructions:
- For crust: Preheat oven to 350 degrees. Combine margarine, powdered sugar, flour, and lemon zest with pastry cutter or fork until crumbly.
- Press into the bottom of a 13 x 9″ cake pan. Bake at 350 for 15 minutes or until light brown. Cool.
- For filling: Beat eggs until blended. Add sugar, flour, grated lemon rind, lemon juice, and baking powder and stir until well combined.
- Pour mixture over crust and bake at 350 degrees for another 15 minutes or until lightly browned. Filling may still be slightly jiggly. Cool.
- Dust top with powdered sugar and cut into bars.
