Fresh Lemon Bars

  • Makes 18 – 24 bars. Yum!
  • Ingredients:
    • Crust:
      • 1 c. Margarine
      • 1/2 c. Powdered Sugar
      • 2 1/3 c. Flour
      • 2 Lemons, grated
    • Filling:
      • 4 eggs
      • 2 c. Sugar
      • 1/2 c. Flour
      • 1 Lemon, grated
      • 6 T. Lemon juice, fresh
      • 1 t. Baking powder
    • Powdered sugar
  • Instructions:
    • For crust: Preheat oven to 350 degrees. Combine margarine, powdered sugar, flour, and lemon zest with pastry cutter or fork until crumbly.
    • Press into the bottom of a 13 x 9″ cake pan. Bake at 350 for 15 minutes or until light brown. Cool.
    • For filling: Beat eggs until blended. Add sugar, flour, grated lemon rind, lemon juice, and baking powder and stir until well combined.
    • Pour mixture over crust and bake at 350 degrees for another 15 minutes or until lightly browned. Filling may still be slightly jiggly. Cool.
    • Dust top with powdered sugar and cut into bars.
