Cathy’s Famous Spring Salad

This recipe comes from Calvin’s “Favorites: A Collection of Recipes”. Makes 6 – 8 servings.

  • Ingredients:
    • 1 cucumber, peeled
    • 1 carrot
    • 1 green pepper
    • Two 12 ounce packages of egg noodles
    • 1 can sweetened condensed milk
    • 2 cups salad dressing
    • 1 teaspoon sugar
  • Instructions:
    • Finely chop cucumber and carrot. Thinly slice green pepper. Combine vegetables in a mixing bowl.
    • Cook egg noodles according to package directions. Drain and rinse with cold water.
    • Meanwhile, combine condensed milk, salad dressing, and sugar. Pour over vegetables and refrigerate.
    • When noodles are done, add to vegetables and toss gently. Chill. Enjoy!
