Calvin’s Coffee Cake

  • Makes 12 – 18 servings
  • Ingredients:
    • 1 3/4 c. Sugar
    • 1/2 c. Butter or margarine
    • 5 Eggs
    • 1 1/4 c. Sour cream
    • 2 t. Vanilla
    • 1 1/4 c. Flour
    • 2 t. Baking powder
    • 3/4 t. Baking soda
    • 2 t. Cinnamon
    • 1 c. Chopped pecans
    • 1 c. Raisings, optional
  • Instructions:
    • Preheat oven to 350 degrees. Spray a 13 x 9″ cake pan with non-stick spray.
    • In a mixing bowl, beat together sugar and butter until light and fluffy. Beat in eggs one at a time. Stir in sour cream and vanilla.
    • In a separate bowl, combine flour, baking powder, baking soda, and cinnamon. Add to the butter mixture. Blend until smooth. Add pecans and raisins.
    • Pour batter into cake pan and bake for 30 minutes or until cake springs back to the touch.
    • Enjoy with a fresh cup of coffee or tea!
