- Ingredients:
- 1 3/4 c. Sugar
- 1/2 c. Butter or margarine
- 5 Eggs
- 1 1/4 c. Sour cream
- 2 t. Vanilla
- 1 1/4 c. Flour
- 2 t. Baking powder
- 3/4 t. Baking soda
- 2 t. Cinnamon
- 1 c. Chopped pecans
- 1 c. Raisings, optional
- Instructions:
- Preheat oven to 350 degrees. Spray a 13 x 9″ cake pan with non-stick spray.
- In a mixing bowl, beat together sugar and butter until light and fluffy. Beat in eggs one at a time. Stir in sour cream and vanilla.
- In a separate bowl, combine flour, baking powder, baking soda, and cinnamon. Add to the butter mixture. Blend until smooth. Add pecans and raisins.
- Pour batter into cake pan and bake for 30 minutes or until cake springs back to the touch.
- Enjoy with a fresh cup of coffee or tea!
