Beef Barley Soup

  • Makes 12 one-cup servings
  • Ingredients:
    • 1 c. Diced onion
    • 1/2 c. Diced celery
    • 1/2 c. Diced carrot
    • 2 T. Margarine
    • 64 oz. Beef broth
    • 4 c. Diced, cooked roast beef
    • 2 Bay leaves
    • 1/2 t. Salt
    • 4 cups Pearl barley
  • Instructions:
    • In a stock pot sauté onion, celery, and carrot in margarine until tender. Add beef broth and roast beef. Simmer over medium heat for 10 minutes. Add bay leaves, pepper, and salt.
    • Raise heat and bring soup to a boil. Add pearl barley and cook at a low boil for 30 minutes or until tender. Stirring occasionally.
    • Remove bay leaves for serving.
